best idea for a short excursion out of Amman is - in my opinion - Kan Zamaan.
It is located about half an hour outside Amman, no need to describe how to go there, every hotel, tourist info, taxi driver ... will know.
It is a mixture of a local and touristic restaurant. You'll find Jordans (not the poor) there as well as tourists.
It's a big building with even some shops included that had been part of stud before.
They serve properly prepared and cooked meals, mostly local ones with an international touch.
