Kokki's Favorite Mämmi Recipe Mämmi is made of a mixture of water, rye flour, and powdered rye malt, seasoned with dark molasses, salt, and dried powdered Seville orange peel. The mixture goes through a slow, natural sweetening process of several weeks and is finally baked in the oven until set. These preparations take many months and after baking, mämmi has yet to be stored chilled for 3 to 4 years before being ready to eat. |
