If you want to explore some tuscan country without deviating too far from Florence, Fiesole is the place. It is only 5 Km from Florence, but it feels like you have escaped to a piece of paradise. Fiesole is a hill town and has some gorgeous views overlooking Florence. A bus will get you there, but we had a rental car. It can be quite intimidating driving the narrow roads up the mountain, but the beauty is well worth it. The local restaurants offer a charming atmosphere and delicious entrees.
