Name of Shop: Khan el Khalili
Several shops in this market. Prices are quite inflated, so do haggle. The shop owners can be a bit agressive and persistent, but a friendly no-thank-you repeated a few times helps.
What To Buy: You can buy perfume, brass, belly-dance costumes, spices, souveneirs etc
What To Pay: Haggle - no fixed prices

Tent makers souk & Carpets: Carpets

Name of Shop: Tent makers souk & Carpets
Although Egypt is not that famous for carpet-making, you might find some interesting carpets/rugs at good prices. If you pass through the tent-makers souk (street) you will find the carpet sellers. This is also not as touristy and the salesmen were not as agressive.
What To Buy: Rugs (camel hair)
What To Pay: Wide range of prices

You will find many perfume shops all over Cairo, especially in Khan el Kalili. I'm not always sure if it is the real thing you get there. I came across a shop with a very interesting and pleasant owner. I bought some perfume extracts here after spending about an hour with him talking about current affairs etc. A very nice experience.
