Don't limit yourself to the city. Drive up or down the coast from Sydney. As little as one and half hours away you will find beautiful and uncrowded beaches as well as lovely little coastal towns to visit.

Also go inland a bit. A trip to the Blue Mountains is only about an hour away and has breathtaking scenery and some lovely B&B's as well as the bigger hotels. Great in any season.
