Quite nice. The real draw is the views, in which you can draw in the breadth of Fes with your eyes - which I take advantage of even though I live in Fes. Otherwise, the staff is fine, the rooms are spacious and cozy. The rooms are bland but somehow it works after a day in the medina.
Of course, with my soft spot for the pool I'd recommend a Texaco that had one, but this one is lovely.
I'd say you may feel a bit stupid shelling out nearly 200 bucks for this one - but if you got it, baby, flaunt it.
It is luxurious, romantic travel...
Unique Qualities: The pool and mountain combo is orgasmic anyway - but it really works here...

!50 DH in Fes - I'll suggest Hotel Agadir in Fes Jdid.
1) get in cab
2) tell them "bab semmareen - fes jedeed"
3) ask your taxi if they know "hotel agadir" - if not, get out at bab semmareen - giant castle ports - don't go inside.
4) ask a local store nearby "hotel agadir?"
5) it is just a few steps from the bab semmareen
It is the cheapest, safest (in regards to the staff, anyway) and most reliable place that comes to mind - though others may have more suggestions.

You could hang in the cafe for the morning...
Short stay but the staff was friendly - there is guarded parking and a serene indoor patio cafe to it's credit. The rooms were alright... nothing too special there. I gotta get my jacket back from those cats - left it in my room last visit.
The view I had was not impressive, the rooms were plain.
The breakfast cafeteria was loud, the food typical and uninteresting, nothing was quite ready.

Unique Qualities: The staff* was excellent and warm hearted, the lobby and patio are very attractive...they were excellent places for business meetings I held while there. Safe, 'indoor' parking...
*Everyone but whoever inconsiderately stole by Italian tailored suit jacket.

Grand Hotel, Ville Nouvelle, Fes
Pleasant. It is really just a great location if you have any interest in digging around in the Ville Nouvelle. You have the lovely little garden park with the ducks and waterfall across the street and every modern convience in a modernish setting. This choice is for folks who just don't want much of the old medina and would prefer something more EuroAmerican. Lots of tourists here.
UPDATE: Late night here has become a real stage for drunks and dopers to enact what hell feels like - almost every night. It is not safe right now after hours, so make sure if you are coming from the medina to head right in after midnight.
Unique Qualities: Right now their unique quality is not claiming responsibility for the aggressive drunks that fill the parking lot after midnight. Their impassive attitude could earn them a place in the State's current administration. Clean up your act, Grand Hotel!

Look - I know I will lose points with my friends who are looking to do their trip on a budget - but let's say you wanted to completely drown yourself in luxury. Here you go - Sofitel (of course, no matter what city) has all the bases covered - music, incredible food (by comparison to alot of restaurants in Fes - yes) and just spot on service with a English fluent staff.
I will say (besides the mainstay of Hotel Batha in the medina) that until I bought my place in Fes - this was the number one self-spoiler to duck into.
One thing - it is bloody expensive. And if wasn't so damn good you'd feel like a chump shelling all that money out...
Unique Qualities: Even though everything was great - I feel like the service was the best and most memorable. It was a time before I spoke arabic and everyone was so helpful... I would go back just to say hi around the Eid and Ramadan....

I actually stayed a month while finding my home in Fes - I loved the people, the pool, the poolside bar, the layout of my place (opening on one side to a garden and the other to the pool)
I also enjoyed taking breakfast on the terrace above the pool - modest regal feeling.
Most of all, you are right in the medina, with access to taxis, a place to park your car with a 24 hour guardian...
Unique Qualities: I felt like the staff was the outstanding characteristic of this hotel... it just felt like home to me. I still stop in and salaam these cats.

I had a few run-ins with the owner, but I was also filming for a month in the area - I had a few run-ins with everyone in Imlil, I think. Over all, Si Mohammed (the owner) was generous, helped me with my time there -
I found the hotel's foyer, hammam space, and cafe in better condition than my room. I think you need to ask to see the best rooms.
It's cheap, safe, pretty clean...I recommend it as a budget choice.

Enormous, friendly, climate controlled, not exotic - just what you need if you are concerned about culture shock. The staff spoke english - not that I needed to since I speak arabic - were extremely professional. I recommend the Sheraton for people like me when you are doing business and wish to be in a non-distracting environment that will have all the amenitites of hotel office and meeting hall.
Really - do it - treat yourself - pay that 150 dollar and up tag and don't look back. I will say that it is a hotel made for business and a bit of socializing and that I would recommend something smaller for single travellers on the cheap and otherwise.
Unique Qualities: It is quite a handsome amount of real estate and I will always remember feeling a bit overwhelmed at the size of the foyer and it's wonderful poshness...The service staff is truly top-notch - accountable for everything, which I find a relief when planning business meetings...

Directions: If you are driving you essentially have to pass it as you are coming into Fes on Ave Allah bin Abdulallah - it will be on your left when you come to the huge intersection of Place Ahmed al Mansoor.

For Americans, this is really a good start for a hotel. It will remind someone enough of a chain to help ease into the general disorienting feeling of Fes. I prefer this place when I am travelling by train long distances - you can also duck into their restaurants when you have a bit of a wait at the station. I loved this place when I had just travelled for over 14 hours from the UK/Italy\Casa... and the pool felt so right in August...
Don't forget - you are near a station, so ask for for the rooms near or over the garden area.
Unique Qualities: Again, the key word here is familiarity. Alot of people complain of their stays not having clear standards - Hotel Ibis Moussafir has them, and keeps them all over Morocco.
