My husband and I stayed on Ambergris. When we arrived to Belize, we arranged for the short prop flight to Ambergris. That was awesome. Once landed, you are a few block walk to the main town. You can also walk to a golf cart rental place (as long as you have a back pack or wheeled luggage) and rent you vehicle for a few days. We did take the water taxi from the island to the mainland for a tour, and it was cold, windy, (but not miserable!) and bumpy and about and an hour and a half. And realizing we had to do that at the end of our day to come back from our little tourist extravaganza was something we had to prepare for. We all bought long sleeve shirts on the mainland because all six of us on the tour were freezing! Next time I would buck up the extra $50 and take the flight back, but that's me. Once on the mainland, the zoo and the river cave expedition were awesome!
Also, food can be extraordinarily expensive on Ambergris. Meet some locals quickly (ask your housekeeper and barmaid) and ask where they eat. Our dinners went from $50-$100 US dollars to about $5-10, and very good.
The island is safe, everyone is acutely aware that their living comes from tourism so tourists aren't robbed nor hassled by authorities. All bars and restaurants will give you 'go cups' for your drink. Tourists can only walk, take a taxi (the few that there are) or be driving a rented golf cart (there are no Cars for rent). Drinking and driving appropriately appeared to be okay from what we saw others doing. The only time in a month that we were ever questioned in town by an officer was that we had walked out with a 'bottle' of beer, and you are not allowed to have 'glass' outside of an establishment. We were asked to go back to our restaurant and ask for a 'go cup' and that would be fine. We said, 'Thank you, Very much!" and did as he asked. No worries!
I also recommend where we stayed, which was Mata Rocks. Beautiful colors, white, purple, blue, the only beachside bar in our hotel area, and really lovely large rooms and the staff and owners (and their son) were awesome. The airport and town are relatively in the center of this long, north south island. Mata Rocks and other hotels are on the east side and south of the town. There is also plenty of places to stay and eat north of the town, all of which are thrilled to have you visit, even if it is only to their bar or restaurant. Lot of expats own businesses. Check out Wine Divine (near the airport) for good chocolate, good wine, and picnic goodies to bring on your golf cart travel adventures.
