A jar of Polish Sauerkraut
My dad always said that with making Bigos, the more meat, the better the food. So here goes with my own version of this very popular Polish dish.
Favorite Dish:
2 jars of Saurkraut
1 small White Cabbage finely chopped
6/8 Cabanos Sausages sliced
1lb Stewing Steak diced
1 small Bacon joint or Belly Pork diced
1 large Onion
3/4 cloves Garlic
Bayleafs to taste,usually 2 or 3
Salt to taste
Freshly ground black Pepper
1 Tblsp cooking Oil
1 pint of Water
Into a very large stewing pot, add cooking Oil, heat up and then add the diced Beff and Stewing Steak/Belly Pork, fry for about 5 mins on high. Add all other ingredients and stir. Once brought to the boil, simmer on a very low light for a further 2 hours or so, maybe adding a little more Water if needed.
The longer/more that this dish is cooked,the better it tastes. But I like eating it as soon as I'm making it, it even tastes delicious cold!

Fresh Tomatoes
Favorite Dish:
6 large whole tomatoes sliced thinly
1 large onion sliced thinly
freshly ground black Pepper
Vinegar
Place tomatoes in a layer on a large plate, cover with the Onion. Comepletely cover with vinegar and then sprinkle loads of pepper allover.
Serve with cold meats etc.

Polish Meatloaf
Favorite Dish:
2 kilos minced Beef or 1 kg Beef & 1 kg Pork
1 small cup boiled Rice (optional)
1 large Onion copped
3 cloves Garlic chopped
2 eggs
Salt to taste
Fresh ground black Pepper
Steak seasoning
Light Oven to gas mark 6.....
Add all ingredients to large bowl and mix thoroughly. Place large sheet tin foil into baking tray, add all the ingredients and build it into a mound, cover completely with tin foil and then put into oven for 2/3 hours. After 2 hours, unwrap Meatloaf and put back into Oven for another hour.
Can be eaten hot or cold,usually eaten with boiled Potaoes and Bigos (Saurkraut) or with Bread and Butter etc.
My hubby calls this deprickled Hedgehog pie! LOL

There would be a good restaurant in any Polish descendants kitchen, we are all excellent cooks!
Our dad was a brilliant cook and I thank God I take after him where cooking is concerned and not after our mother, she is English and can`t cook to save her life!... one slice of gravy, burns boiled eggs! and her dumplings give you dropsy!!! Napolean could have used he dumplings as cannon fodder, they actually sink to the bottom of the saucepan! hahaha.
I can cook absolutely anything that I put my mind to. I enjoy cooking, it is the only household chore that I do like doing, and I also like eating, so I guess that if one is interested in good food, then one just 'knows' how to become a great chef.
I have to admit, I never measure anything out for a recipe, I just throw it all in and hope for the best and I have never come up with a disaster yet......

Favorite Dish:
This is a lovely and tasty side dish to salads and curries.
Half of a cucumber,peeled and finely sliced.
Small tin of unsweetened cream.
Salt and pepper to taste.
Just add the cream and salt and pepper to the cucumber in a dish,stir well and leave for a few hours before serving.

1lb boiled new Potatoes
1 300g tin of mixed vegetables,drained
1 medium Onion chopped
Salad cream
Salt and freshly ground black Pepper
3 hard boiled Eggs sliced.
Boil Potatos,let them stand to go cold and then cube them and put them into a largish bowl.Add finely chipped Onion and drained vegetables.Then add Salt,Pepper and Salad cream to taste,stir all ingredients well.Add sliced Eggs on top for decoration,but not imperative.......
