Try those very narrow pedestrian only (of course :-) streets ... you'll surely get lost but it's wonderful and surpisingly how easy it is to get away from the crowd in few seconds ... and don't care about the smell :-) I started out my walk from Piazza Roma (bus station) and I followed the touristic indications to S. Mark's square: a very nice walk even if it isn't the fastest way to reach S. Mark. IMHO (I'll do the next time in Venice): get a detailed map of Venice and try an alternative path to go back on your walking.
