    Below are the names of great restaurants I tried in Madrid during my April 2006 trip. I will add more details later:

    - Terra Mundi (Galician)
    - Goizeko Kabi (Basque)
    - Casa Patas (local cuisine + flamenco)
    - los Huevos de Lucio (tapas)

    Officially called El Sobrino de Botín, this restaurant is considered Madrid's oldest. It's been open since 1725 in Old Madrid, close to Plaza Mayor. The restaurant is on multiple levels: the ground floor room is beautiful with traditional Spanish decor, while the basement is vaulted and cavernous. I was concered that this would be a tourist trap, and the restaurant is popular with tourists, but was pleasantly surprised by the tasty food.

    Located in Cava Baja, where there are numerous tapas restaurants popular with locals, los Huevos de Lucio serves exquisite local tapas. The dining room is long and narrow, so there is usually a fairly long wait during peak meal times. This tapas retaurant is part of the more formal restaurant across the street, called Casa de Lucio. I've eaten here twice (April 2006 and November 2007) and enjoyed it both times.

    This ancient tavern has changed little in over 100 years. It is more of a bar than a tapas place, but the short list of tapas served is delicious, particularly the boquerones. The belle epoque decor is extremely attractive, with painted ceilings mixed with azulejos tiled walls (see photos). Enhancing the charm of the place are the dusty wine and sherry bottles stacked above the bar area. Definitely a fun experience in Madrid.

    Do not get discouraged by Terra Mundi's brightly lit kitchen-like dining room. Its simple decoration disguises a kitchen where a Galician granny might well be cooking the delicious dishes with her own hand. This small restaurant is located just west of Paseo del Prado in la zona de Huertas. It serves excellent galega cuisine (i.e., from Galicia in north-west Spain), which is biased towards seafood. This restaurant is definitely worth trying, especially for variety over tapas from Madrid. I have eaten here twice and enjoyed it tremendously both times. Walk-ins are allowed, but may require a wait, so a reservation would be better. Note that the restaurant is not open on Monday nights.

    Great wines and delicious tapas are served at this enoteca/wine bar. It is located in the heart of Chueca and is quite popular, particularly on weekends.
