Hire a Taxi to take you on a tour around the Island. It is a VERY short tour, as the island is VERY small, yet its rich geography offers both the cool, lush green mountains as well as the warm beaches with crystal blue water.
The "Cooling House" is where the sugar can juice would cool off and crystallize. It is across from the remains of the the "Boiling House" where the sugar cane was boiled down. Nevis no longer exports sugar cane products...they export cotton, which is primarily bought by Japanese fabric distributors.
