One thing we started as a family is take a winter vacation. We go now each year on a cruise and we love it. I will be showing more about that in my Bahamas page

Blackberry Dumplings

Blackberry

Blackberry can be found wild growing just about everyplace in the Mountains during the spring. Here is a simple country recipe I make, Blackberry Dumplings. Bring to boil 4 cups of Blackberries with 3 cups of sugar and 1 half stick of butter in a 2-4qt. pot, cook until tender you can add more or less sugar to taste. Add 2 cans of biscuits whole or cut into. Turn stove down to a simmer until the biscuit is done, it's really good with ice cream.

Was surfing Google looking for pictures of Harlan County. I lived there with my fiance for four years in the '90s. It gets into your blood, that's for sure!
