Edinburgh is a really neat city with the rich and storied Scottish history and culture all around you. Must see's are Edinburgh Castle, strolling down the Royal Mile, tasting real Scottish Whisky and eating the national dish haggis (only for the strong of stomach). Ask what it is exactly before you try it. Also, take a hike to Hollyrood Park, well within walking distance, with great views of the city, harbour and surrounding coutnryside.
