RAGU SAUCE
Ingredients
2 garlic chopped
1 celery stick and leaves roughly chopped
½ white onion chopped
½ carrot
1 sprig fresh basil
2 quality spicy pork sausages (skins removed)
1 teaspoon chilli flakes (optional)
3 fresh plum tomatoes roughly chopped
700ml passata (or skinned peeled and sieved tomato juice)
1 tin of plum tomatoes (approximately 400g)
Stir garlic, celery, onion, basil, sausage and chilli in a pan over a hot flame for 3 minutes until the sausage is cooked Add tomatoes, passata and tinned tomatoes Cover until it begins to boil. Reduce the heat to a simmer and leave for about an hour until 1/3 of the sauce has evaporated. Serve over pasta. |
