This is old hat. Going there in 1991 was so different than going in 2001. So much had changed it was unreal.
Definitely must see:
Isla de Mujeres
Chichen Itza
Tulum aka Mayan Riveria
Downtown Cancun where tourists usually dont go.
Up and down the coast for snorkeling.
Cozumel
There are tons of places to go out and have fun.

* La Habichuela - Downtown - Margaritas 25. Reservations recommended. This is a wonderful place. Very pretty and the food is wonderful
* Cabalache - Argentine Steak House - in the mall where Hard Rock Cafe is -
one level up. The steaks are wonderful and so are the side dishes - Be care
not to order too much. The sides are big enough to share.
Perico's - Downtown- the "fun" place. Foods ok but you go for the "party"
La Dolce Vita - Hotel Zone - Italian
Maria Bonita - Hotel Zone - Mexican
