Imagine sitting in one of thousands of Provence's outdoor cafes.
The sun is shining and you are tired.
What to order? Order 'Pastis'!!

The waiter will bring you, depending on his mood, a generous portion (or at least 2 ounces) of pastis along with a cold carafe of water.

The pastis becomes milky white and cloudy as you mix it with the water ( 1:5 ratio ). There is a sweet smell of aniseed, and it is called the "milk of Provence"...and rightly so I think! And pastis should NEVER be enjoyed in a hurry!!
It demands the correct ambience too.
Preferably somewhere in Provence, that felicitous corner of France where vegetables taste great, herbs are potent, garlic abundant, and olive oil indespensable in cooking.

Pastis is a charming drink --- the first glass invites a second and, very often, the second a third. But be careful, very careful, it is insidious and before you're aware of it, you'll need help walking...unless you're a Provençal!! ;o)
