Fried Fish EL PESCAITO FRITO plays an important part in Andalucian gastronomy. Its preparation seems simple, but it requires a special skill for which Spanish cooks are famous. The star of the menu is locally-caught whitebait, although other fish are also popular, such as red mullet, squid ( calamari ), langostines ( large shrimp ), etc. The success of fried fish revolves around the quality of the fish and the talents of the chef. The ingredients needed are fresh fish, virgin olive oil, salt and flour and it is absolutely essential to use clean oil, to make it very hot and to use a deep frying pan.

A genuine Southern Spanish art, FLAMENCO exists in three forms: Cante - the Song; Baile - the Dance and Guitara - Guitar Playing.
Gypsies played an important part in its creation. But also the popular songs and dances of Andalucia considerably influenced early Flamenco. Early Flamenco seems to have been purely vocal, accompanied only by rhythmical clapping of hands 'Toque de Palmas' . Guitar players featuring the dancers increasingly gained popularity.
From 1915 on, Flamenco shows were organized and performed all over the world.
The pictures featured here are from a Flamenco Show held every Wednesday afternoon in the town of Mijas. People come from miles around to enjoy this free show. Though not a true 'Flamenco' it is very entertaining, with wonderful dancing and colorful dress.

Barbecued Sardines

One of the delights of walking along the promenade is the smell of SARDINES being barbecued over open olive wood fires. Note how they display the cooking sardines, in a sand-filled little boat. What a fun idea!
