  • In most African countries you’ll find the same food culture as ours.
    Morning: breakfast
    Noon: dinner
    Evening: supper
    But the difference with us is, a large part of the population consume there meals in a barn/barrack, maquis(fr) or a chop-bar in town, along the street, at a bus station, near a market, etc. The chef prepares food with local season-tied ingredients accompanied with rice fu-fu, manioc, coco yam, etc. The grilled or smoked meat is a must.

  • Ndole is a central African dish made of spinach like vegetable, mixed with groundnuts, palm oil and chilli. They serve it with fish or meat, smoke or fried. This is one of my favourites and when you have the chance to order it you certainly should try it.

  • Near harbours you often find food stalls where they prepare the catch of the day. The fish is super fresh and you always have the first choice. You should agree a price before they start to prepare it, so bargaining is advisable.

  • You can also try to cook your own meals, use local ingredients and be inventive. You can call it fusion kitchen. Don’t be surprised when the local people don’t appreciate your dish. There cooking culture is completely different, but when you are in Africa for quite a long time and you switch tables and dishes frequently you learn “the African Cuisine” in no time. So, when you are in the bush, you are the CHEF. When you use water out of a river you'd better boil it before using it.

    Cameroon is known for its delicious prawns, even the country’s name is related to the prawns. Camarão is the Portuguese word for prawn.
    Along the coastline you’ll find many places where you can eat them, never pay more than 5.00euro.

  • Fufu is a staple food of West and Central Africa. It is a thick paste or porridge usually made by boiling starchy root vegetables in water and pounding with a large mortar. In the French-speaking region of Cameroon, fufu is sometimes called couscous. In Western Africa, fufu is usually made from yams, sometimes combined with cocoyam, plantains, or maize. In Central Africa, fufu is often made from cassava, as is the Liberian dumboy. Fufu can also be made from semolina, rice, or even instant potato flakes.

  • Alcoholic beverages are wide spread in Africa, even in Islamic countries you can consume and buy alcoholic drinks. You can drink as much as you want, but always keep in mind, you’re the guest in a foreign country. So don’t provoke the local people by walking around drunk.

  • A kola nut is a small purple/yellow nut with a bitter taste. They say it has hallucinating and stimulating effect, but I never felt it. You can buy it along the street are on markets and use it as a gift as they do it over there.

  • Where you find sea and beaches you can find coconuts. These delicious nuts are sold for less than 20 eurocent and they always taste refreshing. The milk is sweet and creamy and full of nutrients. Give it a try and when you have to chop it yourself watch out for you fingers.

  • Is a favorite Ivorian dish, it is made off fried plantains with grilled fish or boiled eggs and served with a red hot pepper sauce. They serve it in almost all the chop-bars in the southern part of the Ivory Coast.
