Stellenbosch is a thriving little town an hour or so outside of Cape Town. Stellenbosch is a university city, so there are some good pubs and a young lively atmosphere.
The must do here is a wine tour outside of Stellenbosch to the spectacular vineyards, but also a nice wander around the small shops and the town itself is a must.
