This is what we call "pata negra" also known as BELLOTA.
These kind of cured ham happens to be one of the most delicacy here in Spain. It could run you in the range of 450 Euros for one leg of pata negra...but no regrets as it all seems melting in your mouth with a good glass of wine would be the most delicious meal.

CONTINUATION OF OUR HOME COOKING PAELLA:
4.Heat another 3 tablespoons of oil in the paella pan. Add the onions & cook for 2 minutes, then add the garlic & paprika & cook for an additional 3 minutes until the onions are soft but not brown.
5.Add the drained rice, beans, peas to the paella pan & stir until coated in oil. Return the chicken thighs and chorizo & any accumulated juices to the casserole. Stir in the stock saffron liquid, salt, pepper and let it boil while stirring.
6.Reduce heat let it simmer without stirring for 15 minutes * or until the rice is almost tender - most of the liquid has been absorbed.
7.Arrange the mussels, shrimps, sweet pepper strips on top. Cover the casserole - continue simmering without stirring for about 5 minutes until the shrimps become pink, the mussel’s open.
8.Discard any mussels that are not open. Taste & adjust the seasoning. Sprinkle with fresh parsley and serve at once.
PLEASE NOTE: Unlike risotto, the rice for a good paella is not & NEVER sticky with sauce, yet each grain should be moist with olive oil.
Stirring disrupts the way the rice cooks. Gradually lowering the heat as the liquid reduces, and giving the paella pan a shake, will help to prevent the rice sticking.

HOME COOKING PAELLA
Easy Recipe For PAELLA
SERVES 6- 8
2 PINCHES (SAFFRON THREADS)
2 CUPS Spanish long grain rice
16 live mussels (6 tbsp. olive oil)
6-8 unbonned chicken thighs
5 oz chorizo sausage, cut into ¼ in-slices
2 chopped onions
4 large crushed garlic coves
1 tsp. mild or hot Spanish paprika
3 ½ oz chopped green beans
1 cup frozen peas
5 cups fish, chicken or vegetable stock
salt & pepper
16 uncooked shrimps, shelled
2 sweet red peppers, broiled, peeled & sliced
3 tbs. Fresh parsley, chopped finely
1.Put the saffron threads in a small bowl & pour in 4 tablespoons of hot water; set aside. Put the rice in a strainer & rinse until the water runs clear: set aside.
Scrub the mussels, removing any beards, and discard any with cracked shells or open ones that do not close when tapped; set aside.
2 Heat 3 tablespoons of oil in a 12-inch paella pan or flameproof casserole over medium-high heat. Add the chicken thighs, skin sides down & cook for 5 minutes or until golden & crispy. Transfer to a bowl.
3 Add the chorizo to the paella pan & cook for 1 minute until it starts to crisp. Add to the chicken.

Each year and every year Sevilla celebrates “La Feria de Abril", meaning dancing the flamenco, dancing the Seviliana and parties everywhere. These feast last at least for 7 days, day and night feasta. Let´s not forget that during these week we also have the bullfights. Flamenco and bullfighting symbolizes strong cultural traditions in Andalusia (South of Spain) and the April Feria offers a unique insight of the character and the atmosphere of this individual region.
