Siem Reap is a nice little town that seems to growing quite rapidly! There are many new hotels and guest houses popping up all the time. It is a fairly quiet town in the daytime as most of the foreigners are out of town visiting Angkor Wat and other temples and sites. But in the evening the market area comes alive with food stalls and vendors hawking their wares! I didn't explore the town of Siem Reap very extensively as my energy was put into exploring Angkor and the other temples. I got up very early (before sunrise) and returned at dusk or later each night. Except one day that I went into Siem Reap in the afternoon to buy stamps to mail post cards. But I did enjoy the night market! There is a decent selection of fresh fruits to be found also.
Check out the Spirit House. You will see these outside of homes and businesses.

I bet most visitors ignore Siem Reap because of Angkor Wat. It's nice that you learned a little about the town and took some pictures.
