Forget any French that you know; it won't help you very much in New Orleans. In many cases, French street names, family names, and food names aren't pronounced the French way -- over the years; they've been Southern-ized. For example: Praline ......... PRAW-leen Carondelet.......... kah-ron-dah-LET Esplanade.......ESS-plin-aid Marigny..........MARE-in-ee Lafayette.....Laffy-ETT Even words with a typical French pronunciation have the accent on a different syllable, Southern style: beignets.....BEN-yays boudin.......BOO-dan filé....... FEE-lay

Tabasco, Louisiana's famous hot pepper sauce, is actually made on Avery Island, 140 miles from New Orleans, but it plays a big role in the Big Easy's cuisine. You'll even see tiny, pocket-sized bottles sold in stores, so that Louisiana natives won't be deprived of their hot fix while traveling. I took this photo in the atrium of the Embassy Suites, which provides Tabasco pyramids for its diners.

It is legal in New Orleans to drink alcohol on the street. This comes in handy when you're waiting for a table in a restaurant and the bar is very small and crowded. Order a drink and ask for a to-go cup -- then take your drink outside and wait in the fresh air. Sidebar: One of my daughter's friends, accustomed to this New Orleans custom, asked for a to-go cup in a Los Angeles bar and was met with an incredulous stare. :)
