I witnessed the sunset on two consecutive days from a good vantage point by the town wall. The sunset was better on the second evening because there was a little more cloud. No doubt more spectacular sunsets could be witnessed from this location if there was even more cloud, but being Andalucía I suspect that cloudier days are few and far between.
The photo of the simple house was taken after the sunset on the first day, on turning 180°. I think an older man and woman live there and they have seat by the door. The woman was sitting on the seat. Over the years they must have had hundreds, maybe thousands, of opportunities to witness the Úbeda sunsets from that seat. It would also be a good vantage point to observe the sunrises, which I am sure could be equally romantic on occasions.

Directions: Walk due south from the Plaza de Vázquez de Molina and you will eventually come to the edge of town at the town wall. An indentation in the town wall provides a good vantage point from which to view the sunsets.
