Iceland - Be the Viking

If you are going to travel from the U.S. to Europe, check out deals via Iceland Air - easily the best airline I've flown on. I highly recommend a stop in Reykjavik. I spent three nights on the way to London and had a great time. The people are fabulous, the seafood is awesome, and the city is clean and safe.
I will most definitely be back.
