We went on a canal tour on our second day in Amsterdam but it really was a bit of a tourist trap. It covered the main sights (Anne Frank huis, Centraal Station, etc) but otherwise offered little of interest. I was hoping for some pointers on things that were not in every guidebook. More on this later...

At Least Do This: Maybe make it one of the first things you do in Amsterdam as you will most likely have covered the same route on foot otherwise.
Alternative: Perhaps rent a pedal boat and explore the canals yourself.

Damrak - the long street running from Centraal Station to Dam Square - is basically one big tourist trap. It's full of souvenir shops, bureaux de changes, tacky bars and fast-food joints.

At Least Do This: Go to the sexmuseum. It's completely aimed at tourists and a bit tacky, but for 2.50 is well worth the price and a is a bit of fun.

Walking down Damrak, especially at the weekend, you might easily think you are back in Britain. I have never seen as many English football supporters congregate, nor heard as many English accents, in any one place outside Britain as in Amsterdam. If you want to see the 'real Amsterdam' avoid Damrak for the weekend.

At Least Do This: Don't wear a premiership football club shirt - you won't stand out!

I've heard that Madame Tussaud's of Amsterdam is nowhere near as good as the London version (a tourist trap anyway!) and is best avoided. Which we did apart from this photo...
