The Philippines have long had an undeservedly poor reputation when it comes to food.
Much of that must be a result of wrong expectations: if you expect "exotically" spicy dishes along the lines of Thai or Chinese, you will have to be disappointed.
Much of traditional Filipino cooking has evolved along the Spanish lines - chicken and pork are the local favourites, often in the form of some stew. The Americans have left their legacy in the form of Filipino fondness for fastfood - though for all their efforts, Filipinos still can't make junk food as bad as the real thing! ;-)
With all the sea around, there is of course plenty of seafood, though it doesn't usually come really cheap.
If you find all these boring and wish for something more adventurous, well, the opportunity is certainly there!
I suggest that you try "balut", available throughout the Philippines, or some traditional tribal cuisine such as "aso" (being prepared on the photo) favoured by the Cordilleran tribes!
If even these aren't exotic enough for you ... ;-)
