I have been to Madrid so many times that it feels like home, so I no longer know what a tourist should do.
There is plenty to see in the city, with sites, buildings, museums, parks and so on. One won't get bored.
The nightlife is good fun as Spaniards manage on little sleep when at a club. Everybody is friendly and patient if one struggles with Spanish.
The food of course is legendary in Spain, and Madrid is no exception. The smaller 'local' cafés and bars offer very good cheaper food. Although, luxury and expensive is not rare either.
