We travelled three weeks in VietNam between 9th and 29th of july 2002.
In that short of period we travelled only in southern part of VietNam. The most northern place we went was DaLat in the central highlands and MuiNe on the east-coast.
What we found, was that peoples are generally extremely friendly, the food is usually great and everything cost next to nothing.
One thing, when travelling in Vietnam, is that you dont meke too tight schedules. Usually the schedules doesnt work as you were thinking of. Calculate few extra hours for short bus trips for example.

The places we liked most, were;

-Mekong Delta, especially floating market and floating village, Sam-mountain with the views to Cambodia and boat trips in the river.
-HCMC(Saigon).
-DaLat with the unique "hotel" of "crazy woman" and one pagoda with its funny and artistic monk that is planning an around-the-world-trip.
-MuiNe-beach with luxurous(but cheap)villas on the waterfront.
-CuChi-tunnels near Saigon, absolutely must see place.
