In some parts of the United States, barbecue is nearly a religion. Nowhere is that more evident, some say, than at the church of the holy barbecue in Huntsville, Texas. The "holy smoke" rises early from the little wood frame annex of the New Zion Missionary Baptist Church. Wednesday through Saturdays, it's praise the Lord and pass the ribs at the church, which serves the need of all denominations of the barbecue faithful —ribs, brisket, chicken and sausage. On Sunday, the church serves the spiritual needs of its flock. y not be the smoke or the sauce that makes the food taste good. It just might be GOD.

Now, barbecue believers come in droves — making the pilgrimage to the unassuming Mecca of barbecue. Yes this place is famous all over the world as the best barbeque in the world that is made with holy smoke. People now line up to enjoy what many have called the best of the state's estimated 1,300 barbecue joints. One national magazine the gentleman’s quarterly called it the best barbecue place in the world. And, yes the price is right: all you can eat for $8. Some see a little divine intervention. Cafe Texan A down home place

Cafe Texan (spelled cafe not café in Huntsville): A Real Texan Cafe - SInce 1936

Old Sam, Prisons and Pine Trees the stuff Huntsville is made of is all here on the walls of this down home cafe on the corner of the main square. The heart of Huntsville are the friendly folks who call this area home. These are the people who donate to local organizations and Act in the local play Cinderella. This is the kind of place you can expect a warm greeting from the owner who is a real Person that lived in town and enjoy a heaping helping of Biscuits and Gravy, and a cup of coffee.

So I say - want to really experience a place, get some local flavor than find out where the locals eat. This is one such spot how do I know I have a friend that lives in Huntsville and is a local but just look where the cars are parked with the Texas licence plats on them will give you a good idea.

Favorite Dish: Now, the hunt for biscuits and gravy B&G also called by the soldiers in world war two SOS (*** on a shingle) takes determination. This old country stable food is going away -but one never knows when you'll hit a SOS jackpot. But like any pioneer, it takes a strong stomach and a taste for adventure. SOS "biscuits and gravy is a rather unattractive dish, and some say B&G is deadly, but I've always considered it like the Japanese delicacy, fugu." The rule is, never take your B&G on appearances or judge a restaurant by name alone, because you may wind-up with cowboy style quiche and scones. Imagine that.

Now the SOS at the Texan café (again spelled wrong) was at most a 4 out of 5 the sausage was home made the grave nice but the bisects which were home made were (crime of crimes) not hot. Really good stuff they pop the biscuits in the oven home made sausage in the pan and make them both on the spot.
