Traditional Basque cooking. Local ingredients, ingeniously cooked. I tried the mini-stack of foie gras, smoked eel and caramelized apple, in emulation of the mille-feuille. Amazing presentation and mouthwatering meal that included a glass of vintage Vega Sicilia.
