Walk around Leh, the capital.
An interesting market, with its share of handicrafts, both traditional Ladakhi, and shops run by people from the Kashmir valley.
Also, the restaurants around town offer a great range of cuisine.
Most of the sights are never far from one another. However, if you may want to visit the few interesting monastries around Leh, you can hire a vehicle for half a day.
Its a good idea to knock off the local market trip on the first day of your trip. Since its always reccommended that you take your first day easy to acclimatise (more important if you`ve flown in). A walk in the market in the evening is something that dosent cause too much strain, and you can take up the more adventureous bits to your trip from the next day...

From Leh, you can take a day tour of the monasterys nearby. Among them- Thiksey, Hemis and Shey. Most of these are outside Leh, but not too far out...
Many tour operators in town- a lot of whom have set up shop in the market area, will offer the tours, where you will usually be picked up from your hotel in the morning, and be dropped back after spending the whole day visiting these monasterys.
Bargaining for a good price is probably a good idea, since there is competition.
