The town centre of Cape Town is not too large and easy to explore in 1 or 2 days and perhaps more if you throw in some museums and hang around in bars, like we did here. But be sure to allow extra time for the surroundings: Cape of Good Hope, Robben Island, Table Mountain, Kirstenbosch Botanical Gardens, Simonstown, etc. etc.
We stayed 6 days, and had our own transport, but could easily stay another week as there are just so many things to do.
