Before the name was changed to Tokyo, it was called Edo. People who are native to Tokyo are called Edokko. The old area of Tokyo is called shi-ta-machi (as opposed to Yamanote).
I was born in shi-ta-machi where the locals "Edokko" are cheerful, open, lively and friendly (very down to earth)--imagine how Sushi chefs greet you as you walk into the restaurant, that is the Edokko talk!
Shi-ta-machi is where Tokyo natives live, and traditional Tokyo (Edo) culture still exists (though it has disappeared a lot). There are good shi-ta-machi spots to visit--Asakusa, Fukagawa, Tsukiji, Ueno...... hope you'll have a chance to see these areas during your stay in Japan.
