We stayed at the Flamingo, just across the 'Strip' from Ceasars Palace. This is a big place that seemed to be pretty full while we were there in early May. starting at $79 per night, $49 rooms also available. Don't let the prices fool you though. We had a beautiful room overlooking the 'bird sancturary' and pool area.
Unique Qualities: They have a small 'bird sancturary' on premises. There's penguins and ducks, something that acts like a chicken but is very colorful, something else that looks almost like a pheasant, and of course FLAMINGOS. There are also albino catfish and koi in the pools around this area.

There are literally thousands upon tens of thousands of rooms in Las Vegas, so you shouldn't have any trouble finding something to your liking.
Unique Qualities: They have a Roman theme throughout. There's an IMAX theatre on premises, and a 3D 'flight simulator' ride that takes you through Atlantis racing against other riders.

Here's the New York Resort Hotel and Casino. As you can see this is made to look like the New York skyline.
Unique Qualities: There's a roller coaster that starts inside the building and then goes around the complete complex. Of course the inside also maintains the NYC theme, and pulls it off quite well. Some areas are just like a climate controlled NYC street scene.

This is the Paris Resort and Casino. Just try and guess the theme of this place.
Unique Qualities: As you've probably guessed by now, all these places have some sort of 'theme'. And these newer places all seem to exploit cultural/national themes.

Another European themed resort, the Venetian. Not sure, but this place supposedly only has suites of 700 square foot or more.
Unique Qualities: You can be romantically sung to by a Gondolier while hundreds of tourists are gawking at you. My boss also tells me the water is a lot cleaner in these 'canals' as compared to the canals in Venice.
