The food is Istanbul is great. Try different restaurants. The national drink (of sorts) is Raki. Very much like Ouzo, it's clear, and you add a little water and ice which turns it a kind of milky color. Raki means 'lion's milk'. It is very alcoholic. Drink 3 glasses and expect to be quite tipsy.

Also, you must try Ayran. It's a yogurt drink, watered down with salt. Once you get used to it (weird at first for westerners) it's hard to live without. Have it with your kababs. But if you buy it from a kabab vendor, make sure it's refrigerated.
