I've been to Zambia twice, but not as a final destination, rather as a bicycling extension while visiting Victoria Falls on the Zimbabwe side. You can rent cheap bikes near the Vic Falls Lodge (see details on my Zimbabwe page about this wonderful lodge) and begin pedalling across the bridge connecting the two countries. We rode toward Livingstone -- really just to say we'd been there -- and were rather unimpressed with the experience, other than the spectacular views of Victoria Falls and the Zambeze River.
