Kolmanskop is an interesting quick trip. It used to be a diamond mining village, but it has long since been abandoned. You can have an interesting guided tour, before going off to explore for yourselves. All of the old mansions are being taken over by sand which does make for some interesting photos, and all of the equipment is exactly as it was left in the 1950's.

Definately go to Fish River Canyon. It may not be as spectacular as the Grand Canyon, but it is a hell of a lot less crowded. There are some great walks, both around the rim, and into the Canyon. It is a steep walk down, but for anyone that has hiked to the Grand Canyon floor, you will probably find this one easier.....

Take a bit of time to see the Skeleton Coast. This is a great place to see some of the shipwrecks for which this area is famous. It is also a place to spot the elusive elephants that live in this area unfortunately I did not...

By far one of the best NP's in Africa to see most of the big game, cheetah and lion being the main two. For one the animals are amazing and they are easibly accesible, from a variety of waterholes, and two there is also some great scenery.
