I'm just guessing, but woodcarving in Quebec probably has Native American roots. I saw this guy carving away on rue du Petit-Champlain, the city's oldest street.

You should definitely try Poutine, which is basically french fries & cheese curd smothered with gravy. Don't worry, you'll have plenty of opportunities to burn off the calories walking around town.
