I was only in Ufa for a week, but I got to sample a lot!
Ufa is decidedly different than "Russian" Russia, most obviously because it is the capital of the Bashkir nation (politically, the "state" is called the Republic of Bashkortostan).
Ufa has a cool nightlife and a music sub-culture (I think of it as the Seattle of Russia).
The Bashkir influence is felt everywhere, from a greater prevalance of mosques than churches to unique cuisine offerings in every cafe (try upachmak and chak-chak!)
